How-To Pickle Cucumbers (Easy, Beginners)

Beginner to pickling? This recipe is for you! Quick and easy refrigerator pickles that are ready to enjoy in 24 hours and stay fresh up to a month in the fridge.

A lot of people are intimated by pickling and believe that it is a time-consuming process that will take a majority of your day. We are here to give you a pickling method that will take you no longer than 10 minutes!

Right now, Ontario pickling cucumbers are in season and on demand at our farm for many customers! These cuc’s are delicious and make great pickles without the added sugar or dyes from store-bought. Let’s get started!

What you’ll need:

  • 3-4 pickling cucumbers (or as many as you can fit in the jar)

  • 5 sprigs of fresh dill or 1 Tbsp of Dry Dill (we sell dill at the market, ask our staff)

  • 2-4 cloves of Ontario garlic minced

  • 3 Tbsp of white distilled vinegar

  • ½-1 Tbsp of kosher salt (to taste, use as much or as little)

  • Distilled or filtered water

  • Black pepper corns (optional)

  • ¼ tsp red pepper flakes (optional)

  • 1-quart jar with lid

Directions:

  1. Fill bottom of 1-quart jar with dill, minced garlic, vinegar, salt, black peppercorns and red pepper flakes.

  2. Cut cucumbers into desirable shape (spears, sandwich slices, or discs) and add to your 1-quart jar.

  3. Add distilled or filtered water to jar, and fill to the top.

  4. Then, screw lid on very tightly and shake the jar to distribute flavours. Leave jar on counter top and shake pickles every 12 hours. After pickles have sat for a total of 24 hours, they are ready to enjoy! Keep pickles in your fridge after opening.

Our Recommendations: Since it is cucumber season in Ontario, try this recipe with 3 different shapes and keep them in your fridge for snacks, lunches, BBQ’s, and picnics! You are guaranteed freshness for up to a month with this method! This recipe is great for pickling other vegetables (omit the dill) such as bell peppers, hot peppers and more!
